I like it done simply; S&P and nothing else. 350°F and you'll know when they're done, the meat will shrink on the bone. It's been awhile since I've cooked them but maybe an hour. You'll need to go by looks or maybe take an internal temp'. You want them well done to dissolve the connective tissue.

See if you can find online data for roasting them to confirm what I wrote. It's been a very long time since I made them and the mind is rusty. I simply can't find them in Maine. (I wish I could!)

After reading about you loving lamb shanks.....I said something about it, and the wife picked up 3 heavily meat laden shanks the other day and made a soup...Simply threw them in a pressure cooker with potatoes, onions and carrots....Voila!
Thanks SD for saying what you did which enticed me to say what I did which inspired my bride to fix this wonderful soup!

Hey man.....lol.....I LOVE them roasted....You'll get NO argument outta me....I also like a lamb shoulder roasted....and lamb chops thrown on the BBQ....};^)) In fact...I have a birthday coming up.....I might pick roasted lamb for my BD dinner....If I do, I send you a photo... Ha, ha....but I have to say...this lamb shank soup was awesome and I did eat two of the shanks just like a drumstick, but the meat was practically falling off the bone....

I sent you a leg bone the other day along with a photo of me with the bone while it still had meat on it....I don't know why you haven't gotten it yet! I'll dig around and try to find the shipping tracking number...but if they still have police dogs bomb checking the mail...well no telling...I'm sure that bone is smelling really great by now.... I can't be held responsible for what happens between a German Shepard and a lanb leg bone....lol!

Bird, by now it's just in pieces mixed in with other used food and deposited on someones lawn. I bet the dog thought it was manna from doggy heaven! Lucky dog.
Fuzzy, I was thinkin' the same thing, but we're just SOL.

It's quite common for me to start my day off with a few eggs. Last night we were watching Masterchef and G' Ramsey gave a challenge to the chefs to replicate his scrambled eggs.

It's different. I don't normally care much for a moist egg, but these were different in a good way. I left off the tomatoes and mushrooms and all I had was seeded rye bread for the toast.
BTW, if anyone watched that Masterchef show I have no idea how some of the chefs got it so wrong. It's super easy to do. One negative, it sticks to the bottom of the pot (SS), or it did for me. BTW, notice the pan he's using for the mushroom and tomatoes... carbon steel.

When I have, as leftover, our homemade kielbasa it's a family thing (Probably from the old country, Prussia in my case) to thinly slice it and add it to scrambled eggs. I think this egg technique would be excellent made with the sausage.
He also mentions adding smoked salmon to it. Why wouldn't some inexpensive caviar work on top of the pile of eggs?
