Yep, that's what I put on my grits; butter and pepper. So how do you make the Johnny Cakes? I need to try those.

Yep, that's what I put on my grits; butter and pepper. So how do you make the Johnny Cakes? I need to try those. Just make the cornbread batter or use jiffy mix. I use a non stick skillet. Spray with cooking spray or use butter. Pour the batter in just like a pancake. I let mine get nice and dark. They are also great crumbled into a cold glass of milk.

Thanks, I'll try the Jiffy Mix. It seems to work the best for me. I will pick some up tomorrow and make up a bunch of them. Next time I show up at the porch I'll bring some.

History... The south couldn't and can't grow high gluten wheat, so many of their traditional recipes for grain revolve around corn which they could grow. Yankees could grow wheat, and at one time New England and Maine was the bread basket of the nation. So our traditional recipes revolve around wheat. We had corn also. What I don't know is why traditional Yankee recipes don't use more corn. Maybe they just couldn't wrap their head around a second grain or thought more about sweet corn and eating it fresh. I dunno.
I have a recipe for Johnnycake but I've never made it. Maybe I should. I can't imagine the wife and I not liking it.

I will. But it didn't happen this morning. I made some fresh corned beef hash the other day, so I had fresh hen fruit and hash this morning. Maybe tomorrow I'll make the johnnycakes as a break from the hash.

Well it’s been almost a year and a half since I participated in this thread, but better late than never. I tried the Johnny Cakes using Jiffy mix. I really like them and eat them at least once a week. Mostly I put butter or an egg on them. In the summer I do Fuzzy’s cold milk recipe. I have a bottle of real maple syrup that a friend sent me from his place in Vermont and every now and then I break it out and douse the Cake in it. Now that’s good eats!

I love maple syrup, but they'd be good with sorghum molasses also. Yumm!
