My mom made a recipe she called hamburger stew during my childhood. OK, truth be told it wasn't "her" recipe, she stole it from somewhere and claimed it as hers. I have her recipe but as with most recipes I've changed it. Now with my heart problems I've changed it yet again to reflect my very low sodium (Na) diet. It's still as tasty as it was decades ago, just heart healthier. It's easy and fairly quick to make, and yes, you CAN make it. It's a meal in a bowl and it's made in one pot.
Recipe follows.
Moms Hamburger Stew
Mom made this frequently when I was growing up. It’s every bit as good as I remember it. But we change it slightly to suit our tastes. I NEVER follow the recipe but only use it as a guide. I let my eyes and tastebuds guide me. Today I also make our own ground beef that is close to 100% lean. I don’t omit the ketchup despite the sodium in it. There is so little sodium per bowl that it’s meaningless. But if one wanted to omit it, use no Na added tom’ sauce and vinegar should make a decent substitute. I haven’t tried that so it’s only a suggestion. I made it with boiling onions sub’ed for the chopped onions and that’s a keeper. Sue and our guest balked at the difficulty of peeling them, but I’ve seen a bagged frozen version on the tube.
I mentioned that I no longer use salt right?
Mom served it with garlic bread, if I were to do that today I would do the same with homemade garlic bread (no NA in the bread or anywhere else) and use tub margarine in place of the butter. I could do that in a one serving version using bannock, aka fried bread, aka camp bread. It’s a fast bread, and tasty (see below, yes you can make it if you understand that you can fry something at less than full blast).
2 Tbls Cooking oil
1 ½ # hamburger
½ cup chopped onion
1 cup ketchup
1 cup water
2 cups sliced celery
4 med carrots, sliced
4 medium potatoes, quartered
2 tsp salt
1/8 tsp black pepper
½ tsp dry oregano
In a large dutch oven add the oil. Add the meat and brown. Add the onion and lightly brown. Add the rest of the ingredients. Bring to a boil. Lower heat and simmer for approx. 1 hour or until veggies are tender. Add additional water to thin if desired. Serve with garlic bread.
Ok, now, what we do...
I dislike cooked celery, but like the celery flavor, so out with the celery and in with celery salt (no longer; use celeriac instead). We also use hamburger, or at times we upgrade the meat to something else. Upgrading the meat can yield a reduced fat stew, unless one uses a very high grade of ground beef..
2 Tbls Cooking oil
1 ½ # hamburger- The meat can be any stew meat, or hamburger
1 cup ketchup
1 cup water
4 med carrots, sliced
4 medium potatoes, quartered
a bunch boiling potatoes
2 tsp celery salt
1/8 tsp black pepper
½ tsp dry oregano
Cook as per original recipe, simmer the beef w/o the veggies for a time to make sure it’s tender. Add the veggies 1 hour before you want the finished stew ready.
12/19/18... Today I use celeriac for all of the celery additions. It has the celery flavor and keeps it's integrity.
Bannock
I make substitutions as required for a reduced sodium (Na) diet. Every Na item in the recipe has a no Na substitution and it works fine that way.
1 cup flour
1 tsp baking powder (Hain makes a no NA version that is single acting and it works fine)
1/4 tsp salt (KCl)
any liquid to make a batter heavier than a pancake but not quite a dough, I mostly use beer or water.
Oil or fat for frying it in (just enough to grease the pan)
Fry in fat so that the outside crisps up w/o burning and the inside is cooked. It might take a few batches to understand where the heat under the pan should be set. Of course both sides are fried.
Can gran' garlic be added to the batter to make garlic bread? Of course. But also add some parsley since the 2 go hand in glove. Of course garlic and parsley can also be added to the butter you spread the split bannock with.
