Got chili on the crock pot. Gonna have it cook for about 8 hours or so. Ground beef, white beans, and kidney beans. I love to top it off with Fritos, and cheese..
I feel bad for the guy that has to sharey office with me tomorrow morning.

Tonight we had what the Mrs.Calls mexican chicken cassarole. It is super easy to do, and super filling. Between that and her baked spaghetti dish I could never have anyting else she cooks and be a happy man.
You take 2 or 3 boneless, skinless chicken breasts. Boil them until they float, then shred them with either your fingers or a couple of forks. After that, you layer the shredded meat in the bottom of a casserole pan. On top of that goes a layer of Campbells cream of chicken soup and one can of fiesta nacho cheese soup. Then a layer of broken up pieces of tortilla chips, then repeat the entire process again for a 2nd layer. Cover with 1/16 or 1/8 inch pieces of Velveeta cheese. Bake at 300-325 or until the cheese melts and the soup starts to bubble. It is great tasting food, with simple ingrediants, and sticks to your ribs. I eat it a couple of times a week for lunch at work.

I cooked some lentil "stew" today. 1# of lentils and a bunch of cut carrots and onions; just a coarse cut. Added a bunch of no sodium chicken bouillon and and a bit of sodium chicken base, gran' garlic; simmered, adding water and adjusting the bouillon (to taste) as required. Put a small portion of precooked chicken breast in my bowl and added the hot stew. Delicious and very low sodium. A 1/2 cup of flour made into bannock with no sodium baking powder and a dash of potassium salt added, for some more stomach filling chew; then fried in grapeseed oil. I try to stay under 500mg of sodium daily. Basically, if I didn't cook it and it tastes good, spit it out.
If I had fresh parsley on hand I would have added a bunch of it.
For Thanksgiving day we'll cook the turkey tomorrow so that I can chill the pan drippings and remove the fat. From that I'll make the gravy. The rest of the meal will be homemade yeast rolls, homemade cranberry sauce, and a veg', probably carrots and onions. Dessert is pumpkin pudding, basically pumpkin pie without the crust; everything we like with no huge hassle and nothing we don't like or need in our diets.

I made chili tonight myself. I cheat and use the packets of seasoning and can stuff. I am not Texan I can make my chili how I like... just saying. I am sure it has too much salt and I know it has too many beans for real chili guys. I live along... woooooo no excuses needed.

We had a friend over for Thanksgiving dinner. It was good, yet simple. The bird, defatted gravy, carrots and onions, homemade cranberry sauce, and homemade yeast rolls. The big hit according to our friend were the rolls. He doesn't cook so to him it was magic. I made them right in front of him and despite having seen it he kept asking, "You made these?". The only items not made from scratch was the butter and tub margarine.

Tonight the Mrs. made baked spaghetti. Essentially you cook the noodles, the meat and the sauce and poor it into a casserole dish. Then you cut 4 or 5 thin slices of Velveeta cheese and put on top. When the cheese bubbles, it's done. I washed it down with a cold Lonestar beer. Great supper!

Not exactly home cooking, but with my new largely sodium free diet and largely cholesterol and sat' fat free diet, treats are few and far between and are to be savored. It's possible to cook that way and make tasty items, but it's total retraining. Basically if someone else cooked it and it tastes good, spit it out; it's poison to my body. Welcome to heart disease folks. FWIW, I have it and all the complications under control and am beating them back. First with surgery for the huge issue, and now with therapy for the lifestyle issues. Anyway, back to the what I wanted to write about.
Some things are non-negotiable regarding diet. I must have the real deal Peccorino Romano cheese on my pasta, and pizza less than once a month simply will not be tolerated. We've started to buy the Little Caesars thin and crispy to limit the carbs, yet deliver the pizza taste that I crave; and while it isn't as good as my homemade pizza (it's REALLY delicious!) it's much easier, very tasty, and much less expensive. I don't know how they do it for the price. Today was pizza day and I enjoyed every bite! You can't possibly conceive how much I enjoyed it! But I also enjoy their regular hot and ready pizza. Hey, I admit it, I'm an addict to pizza and needed my monthly fix.

For those who don't know, I have myself on a very strict diet... no(or low) sat' fat and cholesterol, and for sodium, just as low as I can get it daily. I like to be near 200mg and some days I need to eat salty foods to get the 200mg. That means I cook pretty much everything that I consume. Fast food? No way! If I didn't cook it and it tastes good I spit it out, or by now I just won't put it in my mouth. I have ways of making things tasty w/o salt/sodium.
In that regard I've been toying with the idea of making a long fermented pizza dough, but not making pizza with it but bread instead. With that in mind I have a batch in the shop refrigerator since Saturday (it's presently late Tuesday). Whenever I need a loaf I'll do my best to turn it into the test loaf. It has excellent flavor as a base for pizza. I've used it to rave reviews. I want it to be a loaf of bread, but a foccacia would also work if it doesn't rise to loaf height. I'm playing this by ear.
Too, I eat so little anymore (I want to lose another 30 pounds) that it's a PITA to cook for myself, so what to do? I've been toying with the idea of Manhattan style fish chowder for quite some time. I just made some and had some precooked pollack fish; it's similar to cod and if anyone has ever had a McFish you know it. I put some fish in the bottom of the bowl and ladled the veggie based chowder on top of it, then gently nuked it. OK, the veggie based soup w/o the fish was tasty on it's own. It was every bit as tasty with the fish. This would work for any precooked fish or shellfish. My idea is to freeze it in portions and use what I need as I need it. One bowl is all I need and it's a complete balanced meal in a bowl.
Too, I'm working on a frozen treat that I can actually eat. Ice cream is definitely not on my diet. But sorbet is doable. I made raspberry with frozen berries and the taste was top notch, but it had grit in it from the red raspberry seeds. Next was strawberry and there was no problem with those very tiny seeds. Now I'm working on goosing the strawberry flavor and making it less icy and "creamier" (less icy). I'll do the first test run tomorrow.
I crave pizza and I allow one serving once a month. Little Caesars has a thin crust pizza that has all the taste I want, along with the unwanted sodium and sat' fat/cholesterol that I don't need (all pepperoni cheese pizza has that), but once a month it's non-negotiable. I'm having pizza once a month, period, or screw the diet. I've been good for a month and I expect a treat. That'll happen Friday. The thin crust has much lower carbs. I'd also love to have it with anchovies, but that would be too much sodium.
